Detox Beet Salad

This refreshing and nutrient-dense salad aids in balancing Kapha dosha by incorporating light, dry, and warming ingredients that combat the heaviness and congestion typical of spring. By promoting digestive fire (Agni) and supporting liver detoxification, this salad helps clear excess mucus and reduce sensitivity to pollen allergens.

Detox Beet Salad Recipe

Ingredients:

- Salad Base:

- 2 cups arugula

- 2 cups lettuce

- Toppings:

- 2 medium beets, roasted and diced

- 1 medium carrots, shredded

- 2 tbs dried cranberries

- 2 tbs pistachios

- Green Goddess Dressing:

- 1/4 cup cashew milk

- 1/4 cup olive oil

- 1 Tbs Dijon Mustard

- 1 Tbs Honey or Maple Syrup

- 2 cloves garlic, minced

- Juice of 1-2 limes

- 1/4 cup fresh mint leaves

- 1/2 cup fresh cilantro leaves

- 1 sprig fresh rosemary

- Salt and pepper to taste

Instructions:

1. Prepare the Salad Base:

- Wash and dry the arugula and lettuce, and place them in a large salad bowl.

- Option to chop some mint and cilantro then add them to the bowl with the greens.

2. Prepare the Toppings:

- Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast them for 45-60 minutes, or until tender. Let them cool, then peel and dice.

- Shred the carrots and add them to the bowl with the greens.

- Add the roasted beets, cranberries, and pistachios to the salad bowl.

3. Make the Green Goddess Dressing:

- In a blender or food processor, combine the herbs, cashew milk, olive oil, minced garlic, lime juice, salt, and pepper. Blend until smooth and creamy.

4. Assemble the Salad:

- Drizzle the Green Goddess dressing over the salad and toss to combine.

- Serve immediately and enjoy this Detox Beet Salad!

Green Goddess Dressing: Herbs, Cashew Milk, Olive Oil, Garlic, and Lime

- Mint: Naturally cooling and invigorating, mint aids in digestion and reduces congestion.

- Rosemary: This aromatic herb is rich in antioxidants and has anti-inflammatory compounds that can boost the immune system and improve blood circulation.

- Cilantro: Cilantro is a powerful detoxifier, particularly for heavy metals. It supports liver function and helps eliminate toxins from the body.

- Cashew Milk: This dairy-free milk is creamy and rich in healthy fats, vitamins, and minerals. Cashews are a good source of magnesium, which supports muscle and nerve function.

- Extra Virgin Olive Oil: Known for its heart-healthy monounsaturated fats, olive oil also has anti-inflammatory properties and can help improve cholesterol levels.
